Italian Chicken Quinoa One Pot
Prep only takes a couple of minutes, then just pop the bake in the oven and it’ll be ready in just over an hour. Simple budget friendly meal prep.
INGREDIENTS…
1 can of chopped tomatoes
1 jar of no added sugar passata sauce
500ml chicken stock
2 tsp Garlic powder
2 tsp dried oregano
Pinch of salt
Fresh Italian herbs
200g chopped mixed pepper
1 white onion
400g mushrooms
50g black olives
150g dry uncooked quinoa
600g chicken breast or thighs
I cheat and buy prechopped frozen herbs! They stay fresh in the freezer and require no chopping. Same goes for the peppers!
HOW TO…
If you’re using chicken thighs then it is best to brown these off. If using chicken breast then you can skip this step.
Preheat oven to 180 degrees fan.
Make the sauce by mixing tomatoes, passata, herbs, seasonings and chicken stock together.
Layer your oven dish with quinoa, chopped chicken, then all of the chopped veg (if all the veg will fit! I left my mushrooms out, until the mixture had reduced).
Then pour over the sauce.
Cover with foil and bake for just over an hour, remember to take the dish out and stir after 30minutes.
The dish will be done once the quinoa has cooked.

This is perfect for lunch served with plenty of spinach, but a little low on the calories for a dinner. So for dinner I'll add spicy Italian sausage and some parmesan shavings. Yum yum!
