Healthy & hearty chicken stew

Hi Team, here's one of our regular go to meals for prepping. Its packed full of protein, decent fats, vitamins and fairly low on the GI carbs. The ingredients here are what Rosie uses for 2 days, so 4 meals total. It tastes so good 🤤 For extra carbs roast up some sweet potato or butternut squash.



INGREDIENTS… (4 servings)
600g Boneless Chicken Thighs
2 Onions
400g Carrots
180g Green Beans 
2 Tbsp Smoked Paprika
2 Tsp Olive Oil
200g Mushrooms
2 Tbsp Plain Flour
1 Chicken Stock Cube 
400g Chopped Tomatoes
2 Tbsp Tomato Puree
2 Peppers


HOW TO…
Brown the chicken in a large casserole dish using 1 tsp extra virgin olive oil. Remove the chicken from the dish once browned.

Add chopped onions and carrots to the casserole dish.

Once the onions have sautéed, add chopped pepper.

Once peppers have softened slightly. Add the flour, spices & herbs of choice. Stir for two minutes, then add 1/2 pint of chicken stock.

Chop the chicken into bite sized pieces and add to the casserole dish, along with mushrooms, chopped tomatoes and tomato puree.

Let the stew simmer for approx 45mins. Remember to add the green beans 15mins before serving!
