carrot cake
Heres a mega simple carrot cake recipe which is high protein, high vitamins, contains quality fats and is free from refined sugars. Even better, it tastes awesome! You can make a loaf cake or cupcakes, and it tastes great even without the icing. This has been my go to afternoon snack after hitting the phys.
INGREDIENTS… (10 slice cake)
1 cup Oats (use processor to make into flour)
0.5 cup Protein powder
1/3 cup Sultanas (50g)
1/3 cup Desiccated coconut (33g)
2 tsp Baking powder
2 tsp Cinnamon
1 tsp Mixed spice
4 Carrots
1 Banana
3 Eggs
2 tbsp Apple sauce (or 1 tbsp honey/maple syrup)
HOW TO…
Preheat oven to 150 degrees (fan)
Mix all dry ingredients together - In another bowl mix all wet ingredients together - Combine the two bowls
Line a loaf tin with baking parchment - Bake for approx 40mins (15 minutes for cupcakes)
For the icing simply mix these 3 ingredients together
30g cream cheese
30g natural yogurt fat free
Squeeze of lemon juice
